For the most part, I am a fairly practical baker. But the road to sobriety is pocked with potholes of madness. Fruitcake is one of mine.

I have always liked the idea of fruitcake. As with so many once-traditional things, I detest what it has become. And so, for years now, I have made a hobby of redeeming it.

Fruitcake used to be serious business. It has its origins in late-medieval spiced breads, whose spice and sugar alone made them suitable for festivals, and it remained expensive and laborious until the end of the nineteenth century. In Northern Europe and America, oranges, lemons, and citron had to be imported from warmer climes, and white sugar to candy them was pricey. Raisins too had to be imported, and then seeded — one at a time, by hand. Then California farmers developed seedless raisins and Florida farmers turned to citrus; by 1900 raisins were a cheap source of iron to stick in children’s food, and by the 1950s you could stock your freezer with concentrated orange juice. Industrialization made fruitcake ordinary, and dyeing glacéed cherries green and selling bricks by mail order made it a joke.

But the idea remains sound: a sweet, complex, festival cake that is both accessible to home bakers and laborious enough to be special; fruited, spiced, boozy, and completely over the top; powerfully enjoyable but easily shared, because a slice or two is probably all you need. Perfect for Christmas. In theory. How to restore it?

The first step is to candy your own citrus peel and use a mix of dried fruit for color and flavor. No technicolor goo, nothing not identifiable as food. That was easy to figure out but takes a bit of work — but hey, it’s Christmas, right?

The second step was harder to figure out but, as it happened, far easier to implement. How do you make a cake sturdy enough to hold monstrous quantities of fruit and nuts without its turning into a brick? The cake part of fruitcake is essentially a pound cake, and you need lots of eggs, but you also need something I only recognized once I’d started researching historical baking: gluten structure. Many old cakes were beaten hard after the flour, butter, and eggs were combined, and that’s what holds this fruitcake together. The method here is much the one Rose Levy Beranbaum uses in her “Perfect Pound Cake,” though it appeared decades before in a 1950 Betty Crocker cookbook (go figure). It is both an easier and a more reliable way to get all the eggs into the batter without its breaking, and the resulting crumb is about perfect.

Here, then, is real, serious fruitcake. Note that it must rest for two weeks before serving — so get started early!

Luke 1:39–55

That’s a heck of a greeting Mary gets from her cousin. “Blessed are you among women, and blessed is the fruit of your womb!”

Still, you don’t meet a lot of people who would respond even to that by crying out “My soul magnifies the Lord!”

If you tried that, people would smile pacifically and back slowly away.

On the up side, you’d have that seat on the bus all to yourself.

Seriously, though, did you ever wonder what kind of person Mary really was? We know so little about her, and we have so many agendas. Growing up Methodist I didn’t hear much at all about Mary; we didn’t have pictures of her hanging up in the church, she barely got a mention. Except at Christmas — when suddenly she’s everywhere, loitering on front lawns with her husband and the kings and the lone representative shepherd that came packaged with the Wal-Mart crèche. It’s hard to learn much about her from most of these setups, and those you can… well, let me give you an example.

Take the people who used to live next door to me in my old neighborhood. I knew they were churchgoers, because the bumper sticker on their car said so. They had the polite but stern and unhumoring quality I had learned as a child to associate with certain classes of evangelical Protestant. They had a perfectly maintained lawn that they never, ever used, not even the clean white porch swing in the side yard. And every Christmas they put a crèche out front, a simple one: Mary, Joseph, Jesus in the manger, and a tiny shelter representing the stable. There may have been an angel; I don’t remember. What made this display noteworthy was that all of them — Jesus, Joseph, and Mary — were represented as babies. It was the complete inversion of the Medieval practice of representing the infant Messiah as a miniature adult, with adult proportions and an adult expression. Out on my neighbors’ lawn, even Mary and Joseph had disproportionately large heads, like babies of almost any mammalian species—it’s how you can tell Charlie Brown is a little boy and not a balding old man, and how the aliens in Close Encounters of the Third Kind were made to look safe and innocent instead of weird and scary. Worse, they wore the placidly idiotic expressions of baby dolls. They were cute, like pandas or someone else’s puppy. If they hadn’t been made of cheap plastic they might have been cuddly.

When my former neighbors bought that house and I saw their crèche for the first time, I was not a Christian. I was coming out of a long atheist interlude, drifting in a direction people call “spiritual but not religious” — sensing that something was missing, casting about for it, open to ideas and suggestions and potentially convincing narratives.

What I saw in my neighbors’ front yard was not a potentially convincing narrative.

At best, it was nice. Pleasant. Polite. Sentimental, yes. Safe? Very safe. But I didn’t need pleasant and polite. I didn’t need sentimental. I could find those things elsewhere, plenty of places — and they weren’t enough. I didn’t need a god who was merely pleasant. Although I may not have recognized it at the time, I didn’t need a god who was safe. I needed a god who could shake things up — who could change things — who could change me, who could save me. I needed a god who could kick some butt — mine, when necessary. And that was going to take more than a really super nice guy. It was going to take more than a god who would pick a babydoll to be his mommy.

Now, having been raised Christian, having been exposed in my collegiate singing career to Latin masses and the works of Thomas Tallis, and having studied and written about the Old Order Amish, I was aware that Babydoll Crèche did not represent the full breadth and depth of the Christian experience.

Nevertheless, when I saw that crèche… well, I thought, if these people don’t take their god seriously, why should I?

The angels in Luke’s gospel spend a lot of time telling people not to be afraid. Fear not, Zechariah! Fear not, Mary! Fear not, shepherds! And over in Matthew, Do not be afraid, Joseph! They remind me of a guy I used to work for, who often opened his emails with “Now, don’t panic…” When he did that, I knew I was in for it. I knew there was a but coming, and that the but was the point of the message. And that was only my boss. When an angel of the Lord appears unto you, saying fear not, you know that but is going to be a whopper, because angels don’t appear to people to tell them they forgot the milk at the grocery store.

Hey, Joe, now don’t panic, man, keep it chill, but your fiancée’s pregnant by the Holy Spirit. And look, man, we need you to marry her anyway and raise the baby as if it were your own. You’ll face scorn and rejection, but hey, no worries — everything’s going to be all right.

No problem.

Of course when an angel of the Lord tells you that everything will turn out all right, you can safely assume that it will, even if God’s standards for “all right” may not always line up perfectly with our own. And the Christmas story is so thoroughly infused with everything’s gonna be all right that we forget to be afraid when the angel appears. We jump ahead to the scene at the manger, the new baby who never cries, the mother who is not at all tired or sore, the stepfather who does not mind at all having been cuckolded by God or being forced to shelter his pregnant wife and newborn son in a barn, the shepherds slack-jawed in contented wonder, the magi safely arrived with their expensive gifts and nattily dressed entourages. We have viewed that scene so many times that we barely give it a second thought. I see it a half-dozen times just driving into town, spread out in neighbors’ yards.

The specificity of good wishes

I ran across this quotation this morning, with which I’d like to agree if it didn’t irritate me so much:

…When a festival goes as it should, men receive something that is not in human power to give. This is the by now almost forgotten reason for the age-old custom of wishing one another well on great festivals. What are we really wishing our fellow men when we send them ‘best wishes for Christmas’? Health, enjoyment of each other’s company, thriving children, success—all these things, too, of course. We may even—why not?—be wishing them a good appetite for the holiday meal. But the real thing we are wishing is the ‘success’ of the festive celebration itself, not just its outer forms and enrichments, not the trimmings, but the gift that is meant to be the true fruit of the festival: renewal, transformation, rebirth. Nowadays, to be sure, all this can barely be sensed behind the trite formula: ‘Happy Holidays.’

Josef Pieper, In Tune with the World: A Theory of Festivity (St. Augustine’s Press)

I haven’t read the book from which the passage is taken and know almost nothing of Josef Pieper, so my criticism may be less of the author than of the person who quoted him, but the jab against “Happy Holidays” seems a tad overwrought — as if a two-word cliché constituted a magic formula for the bestowal of divine grace, or were meant to be. And it fits far neatly into a certain kind of good-old-days thinking that I will admit I find tiresome. Back in the days when people wished a Merry Christmas to strangers over a store counter — say, a quarter century before Pieper wrote this in in 1999, which is just about the earliest reach of my memory — did they really have all that in mind? Renewal, transformation, rebirth? I wouldn’t venture to give people quite that much credit, even when the store counter was replaced by a folding table at my small-town church bazaar, even when they might have had the necessary theological grounding. Certainly it’s possible to pack all that meaning into “Merry Christmas,” and perhaps that’s what people ought to have meant, but I don’t believe they’d thought it through quite so carefully.

Then again, the possibility of meaning is not something to be lightly dismissed.

Christmas cookies the kids can roll and the adults will eat

The winter solstice party was cancelled on account of winter weather, and the world failed to end after all, so we spent Friday evening at home decorating sugar cookies. My nine year-old art director had just received a new box of extremely fancy cookie decorations from her grandmother, and so each batch, two cookie sheets’ worth, took nearly an hour.

“You know, in my day, we only had the red sugar and the green sugar.”

A brief history of the sugar cookie

Traditions have a way of growing sadly stale over the years, don’t they? The spirit that once animated them slowly dies, leaving only the dry outer husk of empty actions. Ah, but sometimes we can revive them by looking to the past, by finding the old spirit and sloughing off the dead forms. Sometimes we find that the original form of a tradition not only meant more at the time, but can mean more to us today. Sometimes the past is like a little hope chest, a little… er… hopeful thing. Or other.

This is not one of those times.

Have yourself a medieval Christmas

My daughter, who is eight, tells me that her favorite Christmas carol is “Riu, Riu Chiu,” a half-millenium-old Spanish song about the perfection of the Virgin Mary and the birth of Jesus. With vivid lyrics about furious wolves and innocent lambs, accompanied by whatever handheld percussion happens to be available, it at once explains the theology of both the incarnation and the immaculate conception (centuries before even the Catholic Church accepted the latter) and gets everyone off their feet to dance and spin — if, hearing it today, they dare dance to a Christmas carol. An eight year-old dares, because she happily doesn’t see the contradiction between devotion and dancing. And I’m realizing that she’s right.

Enter the Belsnickel

The story of the Krampus has been making the rounds lately. For those who haven’t heard, he’s an old-world Germanic mythical creature who terrorizes naughty children at Christmas. Apparently pepper-spray-wielding shoppers at Target aren’t scary enough for Americans these days, because various cities are holding a Krampuslauf, or Krampus parade, this month. One of those cities is Philadelphia, and that’s a tragic heresy — not because it’s unchristian, but because Philadelphia is surrounded by the Pennsylvania German heartland, and the Pennsylvania German tradition has its own Christmas bogeyman, the Belsnickel. Before we go running back to Europe for bizarre new traditions, let’s take a closer look at one of our own.

Christmas cookies: Speculaas

Occasionally I get to bake cookies without a research agenda, to try something new just for fun. Since it’s St. Nicholas Day, Ivy and I baked speculaas cookies, which is what the Dutch traditionally bake for that festival. I’m not Dutch, I’ve never in my life celebrated St. Nicholas Day, and until today I’d never eaten speculaas. Ah, the joys of cultural tourism! No pressure at all, no expectations, no childhood memories to contend with. Just a damn cookie.

Still, you know, I couldn’t just find a recipe and bake it. I don’t think I’m capable of that anymore. And, anyway, if I did, what would I have to blog about?
